Pulled from the historic Bernheim Distillery property in Louisville, built in the 1890s by the Bernheim Brothers and run by Heaven Hill for decades, it was clear that we would experience some new flavors -- the warehouses are built differently, more closely together, in a suburban environment -- all of these things will impact how that barrel ages. And pulled at just over 8.5 years, this is right in that sweet spot for Elijah Craig. The nose is rich with cherry, cinnamon, brown Sugar, and french toast. This leads into flavors of creme brûlée, maple syrup, vanilla extract and florals like jasmine. The finish then lingers with cocoa, clove, marshmallow, orange citrus and cherry.
